I like to add pecans or walnuts when making this recipe in maintenance mode or for guests. Adjust the amount of stevia as desired; it can be an acquired taste. Start with ¼ or ½ teaspoon and increase to up to 1 teaspoon based on what you like.

2 tablespoons coconut flour
½ teaspoon baking powder
¼ cup (2 ounces/57 g) erythritol, ground in a small food processor until powdery
¼ cup (2 fluid ounces/60 ml) filtered water
2 whole eggs
1 egg yolk
½ cup (4 ounces/115 g) coconut cream
1 teaspoon liquid stevia
¼ teaspoon vanilla extract
Pinch of sea salt
Directions:
- ¼ cup (1 ounce/28 g) raw walnuts or pecans, chopped (optional)
- Preheat the oven to 350°F (177°C). Grease a 9 by 5-inch (23 by 13-cm) loaf pan with coconut oil spray.
- In a heavy saucepan or double boiler over very low heat, melt the butter and chocolate. When almost melted, remove from the heat and stir to blend.
- In a medium bowl, whisk together the almond flour, coconut flour, baking powder, and erythritol until well combined.
- Add the melted chocolate mixture to the dry ingredients, stirring with a whisk. Add the water, whole eggs, egg yolk, coconut cream, stevia, vanilla, and salt and blend into a thick batter. Fold in the nuts, if using.
- Pour the batter into the prepared loaf pan and bake for 20 to 30 minutes, until a toothpick inserted in the center comes out clean. Let cool in the pan before serving; the brownies will firm up as they cool. Cut into 5 pieces and serve.
